Phi Alpha Theta Celebrates End of Semester with Annual Christmas Dinner

Twenty-three people participated in the 11th Annual Phi Alpha Theta/History Department French Christmas Dinner at the home of Dr. Stephen Carls on December 6, 2014. Among the attendees were all of the officers of Union’s Delta-Psi chapter of Phi Alpha Theta History Honor Society and all full-time history faculty members. Carls recognized graduating history major Kenton Evans during a dinner program and presented him with a graduation gift bag. He also mentioned graduating history major Shelby Pace who was unable to attend the celebration. Phi Alpha Theta member Allen Bradley provided a special music program on a type of bagpipes called shuttle pipes, which are ideal for performances in small, indoor settings.

The meal consisted of four courses. First up was a spinach terrine surrounded by a green herb coulis, roasted red pepper strips, and garlic-toasted French bread. Beef bourguignon, risotto, and roasted carrots constituted the main course, which was followed by a tossed salad and a plate of assorted cheeses. Finally, guests were offered four desserts: a Marquise au Chocolat cake (an Alsatian variation of tiramisu) with an English cream sauce (crème anglaise), a blueberry trifle (Charlotte aux myrtilles), a lemon yule log cake, and crème brulée.
